SEA SALT BROWNIES


I've needed to get this recipe to a friend, now it's up here for all of you to enjoy, so MAKE THEM.

5 oz. semi or bittersweet chocolate
2 oz. unsweetened chocolate
8 oz. unsalted butter
3 tbs. cocoa powder
1 1/2 tbs. instant coffee powder
3 large eggs
1 1/4 c. sugar
2 ts. vanilla
1/2 ts. salt
1 c. flour
course sea salt

Preheat oven to 350.

Chop chocolates, cube butter and melt in a medium bowl set over a double boiler until smooth. Mix in cocoa powder and instant coffee until smooth. Cool slightly.

While chocolate is cooling prepare your pan. Spray a 8 in. sq. pan with cooking spray. Press two pieces of foil into the pan leaving a few inches overhang on all sides, spray with more cooking spray.

Whisk the eggs, sugar, vanilla and salt togeather in a medium bowl. Whisk in chocolate mixture, then fold in flour until just combined.

Pour into prepared pan and spread into the corners with a runner spatula. Sprinkle with desired ammount of sea salt and bake for 35 minutes or until a toothpick comes out with a few crumbs sticking too it.

Cool on a wire rack for two hours. I like to chill mine over night before cutting as to make nice, clean 1 inch squares.
